Ingredients

  • 1 pound spicy breakfast sausage (such as Jimmy Dean or J.C. Potter)
  • 2 cups grated Monterey Jack cheese
  • One 4.5-ounce can chopped green chilies
  • One 4-ounce jar diced pimientos, drained
  • ¼ medium onion, finely grated Pinch of kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon chili powder
  • 2 tablespoons minced fresh parsley, plus more for serving
  • ¾ cup baking mix (such as Bisquick)
  • Ranch Dressing or bottled ranch dressing, for serving (optional)
  • Barbecue sauce, for serving (optional)

Directions

  1. Preheat the oven to 400°F. Line a sheet pan with foil.
  2. In a large bowl, combine the sausage, Monterey Jack, green chilis, pimientos, onion, salt, pepper, chili powder and parsley.
  3. Add the baking mix
  4. Stir until everything is well combined
  5. Scoop into tablespoon-size portions
  6. Roll between hands
