Sausage Balls

Ingredients
- 1 pound spicy breakfast sausage (such as Jimmy Dean or J.C. Potter)
- 2 cups grated Monterey Jack cheese
- One 4.5-ounce can chopped green chilies
- One 4-ounce jar diced pimientos, drained
- ¼ medium onion, finely grated Pinch of kosher salt
- ½ teaspoon black pepper
- ¼ teaspoon chili powder
- 2 tablespoons minced fresh parsley, plus more for serving
- ¾ cup baking mix (such as Bisquick)
- Ranch Dressing or bottled ranch dressing, for serving (optional)
- Barbecue sauce, for serving (optional)
Directions
- Preheat the oven to 400°F. Line a sheet pan with foil.
- In a large bowl, combine the sausage, Monterey Jack, green chilis, pimientos, onion, salt, pepper, chili powder and parsley.
- Add the baking mix
- Stir until everything is well combined
- Scoop into tablespoon-size portions
- Roll between hands
