Ingredients

  • 1 lb smoked sausage, cut into rounds
  • 1 Tbsp olive oil
  • 1 large onion, diced
  • 1 poblano pepper, diced
  • ½ sweet bell pepper, diced
  • 1 Tbsp minced garlic
  • ¼ cup butter
  • 2 tsp cajun seasoning, or to taste
  • salt and pepper, to taste
  • 1 (20-oz) package frozen cauliflower rice, thawed
  • 1 (10-oz) can Rotel diced tomatoes and green chilies undrained
  • ½ cup sour cream
  • ½ cup shredded Monterey Jack cheese

Instructions

  1. In a large skillet over medium-high heat, cook smoked sausage in olive oil.
  2. Add onion, poblano pepper, and sweet bell pepper to the skillet. Sauté until soft.
  3. Add garlic, butter, cajun seasoning, salt, and pepper.
  4. Add cauliflower rice and cook until softened and slightly browned.
  5. Add Rotel, sour cream, and cheese. Simmer on low for 5 to 10 minutes, stirring occasionally.
