Garlic Parmesan Air Fryer Chicken Bites

Ingredients

  • 2 chicken breasts, cut into bite size cubes
  • 2 eggs
  • 3/4 cup panko
  • 1/4 cup cornstarch
  • 1/4 tsp salt & 1/4 tsp pepper
  • 1/2 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • 1/2 tsp onion salt

Sauce

  • 1/2 cup butter
  • 1 tsp garlic powder
  • 1/2 cup powdered parmesan cheese
  • 1/2 tsp onion salt
  • 1/4 tsp Cajun seasoning
  • 1 tsp parsley flakes

Directions

  1. Set up the dredging station by whisking 2 eggs into a small bowl and by mixing the panko, cornstarch, salt, pepper, parsley, garlic powder, Cajun seasoning & onion salt in a separate bowl.
  2. Dip each chicken chunk into the egg mixture and then dredge through the panko mixture. Make sure each piece is fully covered.
  3. Air fry them in batches (you don’t want to over crowd the air fryer basket or they wont cook evenly) at 375F for 13-15 minutes or until the center is 165F.
  4. While the chicken is cooking, add the butter to a medium glass bowl and microwave until melted.
  5. Once the butter is melted, whisk in the other ingredients.
  6. When the chicken is done cooking, add all the pieces to a large bowl and pour the butter sauce over them. Toss to fully coat.
  7. Serve immediately and ENJOY!
