Garlic Parmesan Air Fryer Chicken Bites

Ingredients
- 2 chicken breasts, cut into bite size cubes
- 2 eggs
- 3/4 cup panko
- 1/4 cup cornstarch
- 1/4 tsp salt & 1/4 tsp pepper
- 1/2 tsp Cajun seasoning
- 1 tsp garlic powder
- 1 tsp dried parsley
- 1/2 tsp onion salt
Sauce
- 1/2 cup butter
- 1 tsp garlic powder
- 1/2 cup powdered parmesan cheese
- 1/2 tsp onion salt
- 1/4 tsp Cajun seasoning
- 1 tsp parsley flakes
Directions
- Set up the dredging station by whisking 2 eggs into a small bowl and by mixing the panko, cornstarch, salt, pepper, parsley, garlic powder, Cajun seasoning & onion salt in a separate bowl.
- Dip each chicken chunk into the egg mixture and then dredge through the panko mixture. Make sure each piece is fully covered.
- Air fry them in batches (you don’t want to over crowd the air fryer basket or they wont cook evenly) at 375F for 13-15 minutes or until the center is 165F.
- While the chicken is cooking, add the butter to a medium glass bowl and microwave until melted.
- Once the butter is melted, whisk in the other ingredients.
- When the chicken is done cooking, add all the pieces to a large bowl and pour the butter sauce over them. Toss to fully coat.
- Serve immediately and ENJOY!
