Crispy Peanut Butter Cookies

Ingredients

  • 1 cup unsalted butter , softened
  • 1 cup peanut butter
  • 1 cup sugar
  • 1 cup brown sugar , packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking soda

Instructions

  1. To your stand mixer add the butter, peanut butter, sugar, and brown sugar until well combined.
  2. Add the eggs and vanilla extract until well combined.
  3. On the lowest speed setting add the flour, baking soda, baking powder, and salt until just combined.
  4. Put the dough into a medium bowl and wrap with plastic wrap.
  5. Refrigerate for 4 hours (minimum) or overnight.
  6. Pre-heat oven to 350 degrees and line two baking sheets with parchment paper.
  7. Using a 2 tablespoon scoop, add the dough to the baking sheet.
  8. Press in gently with a fork in a criss-cross pattern.
  9. Bake for 8-10 minutes until cookies are just set and barely browning.
